Our History
Scaff Brothers was founded by Frank Scaff and his brother George. It all began in 1928--after Frank "dreamed" one night that he was in the canning business. He got up, wrote down the dream, and the next day prepared a jar of pickles "according to the dream." He put the jar on a shelf in the grocery store which he operated with his brother.
The jar of pickles sat on the shelf for some time. That might have been as far as Scaff's canning business went had not one of the salesmen who visited the store told his company about the delicious pickles. The salesman returned with a large order. That was the start of the business - processing pickled peppers in a small room behind the grocery store. Two other brothers, Joe and Eli, also became involved in the production and sales of the products. The well known F & J Brand originated with the initials of Frank and Joe Scaff. The Scaffs, immigrants to America from Lebanon, had an exceptional talent for selecting and blending spices, especially the mysterious flavors of the Middle East. They combined the spices with other fresh ingredients in developing several delicious food sauces. |

The Scaff Brothers' Lebanese family legacy of blending spices with fresh ingredients lives on through our use of their original hand-written recipes. We still make their F&J Steak Sauce that was so popular in the Harvey Houses along the Santa Fe Railroad, as well as BBQ and other sauces. We also craft a variety of salsas based on a handwritten recipe from 1960. From that recipe we make a range of salsas from a mild Cantaloupe Salsa to 9 levels of inferno hot Carolina Reaper Salsa from our own Carolina Reaper peppers.
We also proudly craft a line of unique preserves, relishes, jellies and syrups using fresh Arkansas Valley melons and produce. The success of the company has resulted from the ability to produce items which have a unique flavor distinctly different from competing brands. The F & J Brand sauces enhance the flavor of the foods they accompany; they do not cover up the natural flavor of meat or other foods. The long-standing tradition of quality continues with all of the sauces being carefully hand mixed and processed with special attention to every detail. No artificial color or flavor is used in any of the F & J Brand sauces. |
